F&B Cost Controller in London

London Full-Time On-site
T

Swan at Shakespeare's Globe is looking for an experienced F&B Cost Controller to join our Purchasing and Cost Control team.
We operate a busy restaurant, bars, café outlets, outside spaces and a high-volume events and banqueting business in one of London's most iconic locations.
This is a hands-on hospitality cost-control role. We are specifically looking for someone with previous experience in food and beverage cost control within a restaurant, hotel or similar hospitality operation. Experience supporting a large events or banqueting operation is a real advantage.

The Role
Working closely with the Head of Purchasing and Cost Control, Finance and our operational managers, you will monitor food and beverage costs, investigate variances and help improve profitability across the business.

Your main responsibilities will include:
Preparing daily flash reports and regular F&B cost reports.
Monitoring GP, wastage, stock variances and theoretical versus actual usage.
Costing events and functions, and reconciling actual event costs and GP against pre-event costings.
Completing period-end stock reconciliations and supporting stocktakes.
Investigating purchasing, pricing, invoice and stock discrepancies.
Maintaining accurate recipe costs and reviewing menu profitability.
Checking invoices, credits, transfers and purchasing information.
Reviewing supplier prices and identifying savings opportunities.
Liaising with suppliers and resolving pricing, invoice and delivery discrepancies.
Maintaining accurate product and pricing information in MarketMan and Toast.
Carrying out spot checks on deliveries, transfers, wastage and stock.
Supporting the wider Purchasing, Stock Control and Goods-In team when required.
Providing clear cost analysis to Finance and operational management.

What We're Looking For
You should have practical experience in:
Restaurant or hotel F&B cost control
Food and beverage stocktakes and reconciliations
GP and margin analysis
Recipe and menu costing
Wastage and variance investigation
Invoice matching and supplier pricing
Liaising and negotiating with suppliers
Excel and hospitality reporting systems
Experience of cost control in a large events, banqueting or high-volume function operation would be a real advantage, as would experience with MarketMan, Toast or similar hospitality systems.
You will be commercially minded, highly organised and confident investigating discrepancies and challenging costs when something does not look right.
As the position works closely with stock, deliveries, suppliers and operational teams, the role is carried out at the Swan rather than remotely.
