We are looking for a highly professional Chef de Partie to join our Kitchen team for the very exciting opening of The Alfriston located in East Sussex, which dates back to the 14th century and is the fourth property in the growing Signet Collection. The newly refurbished Hotel has 38 beautifully redesigned bedrooms and suites, a stunning function room, The 1554 Brasserie, offering views over the front lawn towards the sea and revamped herb and vegetable plots across the hotel gardens. The hotel bar offers more casual dining for guests both in and outdoors, while the Orangery serves breakfast and afternoon tea with views over the rear gardens and the Signet spa includes a steam room, sauna, outdoor swimming pool and three treatment rooms.

You will:

  • Ensure that all stocks are kept under optimum conditions.
  • Ensure that all mise en place is always freshly prepared and on time.
  • Ensure that all dishes are being prepared to the correct recipe and to the correct quantity.
  • Ensure that all dishes reach the hot plate or pass correctly garnished, the correct portion and size, presented on the prescribed serving dish in the prescribed manner.
  • Ensure that his/her section is kept clean and tidy at all times.
  • Ensure that junior cooks and trainees receive the right training and optimum guidance.
  • Ensure that any anticipated shortages are communicated promptly to the Sous Chef or Head chef.
  • Ensure that no horseplay is allowed in his section and that all staff under his control are treated fairly and with courtesy.
  • Deputise in the Sous Chef's absence and take charge of the kitchen when directed to do so.
  • Attend training courses and seminars as and when required.
  • Strive to study management subjects in preparation for future advancement.
  • Ensure that all company rules and regulations relating to Hygiene, Health and Safety are being strictly adhered to and recorded correctly.
