We are looking for an experienced Pastry Chef to join our Kitchen team at The Alfriston located in East Sussex. Our 41-bedroom hotel, which has been beautifully redesigned, dates to the 14th century and is tucked away in the storybook village of Alfriston where the rolling South Downs meet the winding Cuckmere River. Our hotel features a stunning function room, The 1554 Brasserie, Godfrey’s Bar, which includes a terrace to enjoy the revamped herb and vegetable plots across the hotel gardens. Our Orangery serves breakfast and afternoon tea daily with views over the rear gardens, and our Signet spa includes a heated outdoor swimming pool with plenty of space to unwind, inside you’ll find a steam room, sauna, and intimate treatment rooms.

You will:

  • Lead our pastry section, whilst working closely with our Head Chef and wider kitchen team to produce an expansive range of savouries and sweets for each service (including Afternoon Tea).
  • Prepare all relevant mise en place for your section, under the guidance of the Sous/Head Chef.
  • Ensure that all dishes are being prepared against our recipe cards, whilst ensuring the correct quantities are used to minimise waste.
  • Ensure that all dishes reach the hot plate or pass correctly garnished, the correct portion and size, presented on the prescribed serving dish in the prescribed manner.
  • Support all commis chefs, ensuring they are nurtured and supported through their training programme, through ongoing mentoring.
  • Communicate any anticipated shortages promptly to the Sous or Head chef.
  • Maintain a professional and supportive work environment, ensuring all Chefs are respected regardless of their level or background.
  • Engage with relevant training programmes to advance your culinary skills, as and when required.
  • Ensure that all company rules and regulations relating to Hygiene, Health and Safety are being strictly adhered to and recorded correctly.
