We are currently recruiting for an experienced Restaurant General Manager to lead our team.

As Restaurant General Manager, you will be responsible for Fayre – British All‑Day Dining | 3 meal restaurant, Lounge, our ‘to go Hatch’ and Room Service. You will lead, coach and train your teams to provide attentive, authentic and gracious luxury service to our guests and diners. You will be accountable for the success of these departments not just financially but also on the engagement of your teams, guest experience and the reputation scores their feedback generates. Reporting to the General Manager and a member of the Hotels Guidance Team, you will lead by example and ensure there is a culture of authenticity, grace and warmth but also consistency and precision. You will work closely with the Executive Chef, Bar General Manager and Hotel General Manager on the detail – menu[s], service and hospitality standards etc and play an active role on the positioning of the Hotel and its Food and Beverage spaces.
The ideal candidate must have been a Restaurant expert and have a minimum of three of the following prior experiences:
- Opened a quality restaurant before in a Leadership role – does not necessarily need to be in a hotel
- Has worked in a 5 Star | Luxury Hotel previously
- Has London restaurant experience
- Be a true epicurean – a food and drink enthusiast
Responsibilities of a Restaurant General Manager will include but are not limited to:
- Managing the full guest and dining experience from the moment of booking through to post-dining – ensuring each and every guest receives a great experience, defined by our culture and values
- Directly managing the Assistant Restaurant Managers, Supervisors and Food and Beverage Administrator in delivering the Restaurants strategy and targets
- Managing departmental costs ensuring scheduling and resources are dispatched accordingly to support operational performance
- Establishing opportunities for improving operations consistently
- Addressing guests' service needs in a professional, positive, and timely manner
- Complying with quality assurance expectations and standards
- Setting a clear example for all employees with regard to personal presentation and positive attitude
- Reviewing guest experience feedback, sharing results and comments and working to improve each facet of the business
- Continuously improving all operational processes and ensuring these are clearly communicated to the relevant team members
- As a member of the Guidance team, helping drive and lead the Hotel Culture which includes playing an active part in Employee Induction and other activities that involve team members not within your specific area of responsibility
- Partnering and being a sounding board for the Executive Chef and General Manager, Bars on menu development
- Being close to the detail and analysing – knowing what is selling, what your competitors are doing and charging, providing gracious feedback on where challenges lie and being brave
- Leading the Wine program throughout the Hotel
- Participating actively in all Marketing meetings – bringing ideas, being creative, involving your team and being open minded and ‘steals’ shamelessly
- Leading the recruitment of new talent within your area of responsibility and ensuring that a robust yet flexible induction plan is created and followed
- Producing the SOPs for Fayre, Lounge + Hatch and Room Service and ensuring that they become part of your teams | department Culture
- Along with your Assistant Restaurant Managers being responsible for Fayre’s feedback by replying to online reviews and queries generated by guests
- Being accurate, ensuring there are robust processes in place for stock control, wastage and breakages and that it is adhered to
- Maintaining the Brand Standards across the Restaurants – ensuring these standards are brought to life, lived and adhered to
- Establishing in partnership with the Executive Chef, Pastry Chef, Rooms Division Manager and Guest Relations Manager a comprehensive Amenity program that is on brand, interesting, luxury and evolves – trends, time of the year, etc
- Ensuring there are robust communication processes in place within Restaurants, not just limited to Daily Hotelwide communication, leadership meetings with their team, handover between shifts and the internal online tools in place
- Preparing the New Year Financial budget for Restaurants in line with the timelines put in place
- Actively participating in Green Initiatives – established and created, and ensuring their team is equally engaged
- Ensuring that Restaurants are compliant; mandatory People and Culture trainings, weekly, monthly, bi‑monthly and annual audits for Fire Life Safety, Health and Safety
- Championing the Restaurants teams upselling program by ensuring that is part of all briefings | handovers, there is regular training and that the targets are realistic
