As Pastry Chef, you will lead the creative direction of all desserts, cakes, pastries and breads within The Shepherd Mayfair. With the support of the Executive Chef, you will produce dishes and menus that will not only delight the Hotel’s guests and diners, but also ensure that Pastry is ‘commercial’. Whilst it will be ideal that the Pastry Chef has previous Hotel experience it is not a necessity; however, having worked in quality restaurants, cafes or bakeries is imperative as is having some London experience.
Responsibilities:
- Support the Senior Sous in the absence of the Executive Chef, which will include stepping in for him/her in leadership meetings etc. and ensuring deadlines are met.
- Creating dishes for the various outlets that are on-brand, are seasonal, reflect the market of The Shepherd Mayfair and are profitable.
- Being relentless in the detail – quality of the product placed on the plate, wage control, wastage and food cost.
- Supporting, mentoring and teaching the Kitchen team so they develop and become future leaders.
- Ensuring that the Kitchen culture is accountable, attentive and positive and that success is celebrated and poor performance is ‘nipped in the bud’ immediately with grace and authenticity.
- Supporting the Kitchen Team Leadership team in managing Kitchen compliance and cleanliness.
- Leading and ensuring there is a culture within the Kitchen of food hygiene and safety.
