We are a growing family-led company who have urban farm shops, cafes, and butchery alongside a busy outside catering section in the beautiful Purbecks, Poole and at Chesil Beach. We are proud of each of our unique locations and the close relationships we have with our local suppliers. We have a small farm with our own rarebreed Mangalista and Berkshire pigs, sheep, White Park beef cattle, and goats, as well as buying from local Purbeck farms with high levels of stewardship and conservation grazing alongside local day boat fish. We are involved in rewilding projects too, with our pigs roaming the RSPB nature reserve as part of their rewilding project. We are provenance and localism at its best - complete traceability from local farms and fishermen. We are just in the last few throws of finishing our new central butchery hub and are excited for someone to join our butchery team to work here as well as in our busy butchery sections in Wareham and Swanage shops, which sell retail meat to the public as well as supplying our other sites for retail and in our cafes and restaurants. We are proud to live and farm in the sought-after area of the beautiful Purbecks and can also offer accommodation for the successful candidate if looking to relocate.

Job Summary

We are seeking a skilled and dedicated Butcher to join our butchery team. The ideal candidate will have a passion for food preparation and a strong understanding of food safety practices. As a Butcher, you will be responsible for the efficient processing of meat products, ensuring high-quality standards are met while maintaining a clean and organised work environment. This role is essential in supporting our commitment to providing local provenance meat in our cafes and restaurants that can also be enjoyed through retail.

Duties

  • Prepare and cut various types of meat according to specifications, ensuring portion control and presentation standards are met.
  • Maintain strict adherence to food safety guidelines, including proper handling, storage, and sanitation practices.
  • Operate and maintain butchery equipment safely and effectively.
  • Collaborate with kitchen staff to fulfil meat orders for menu items, ensuring timely delivery of ingredients.
  • Monitor inventory levels of meat products and assist in ordering supplies as needed.
  • Keep the butchery area clean and organised, adhering to health and safety regulations.
  • Stay informed about new culinary trends related to meat preparation and presentation.

Requirements

  • Proven experience as a Butcher or in a similar role within the food production or restaurant industry.
  • Strong knowledge of food preparation techniques and food safety standards.
