We are looking for an enthusiastic Chef de Partie - Pastry to join our family on a full-time basis. We are looking for someone who has a strong background in a culinary environment as a Pastry Chef de Partie with over 2 years experience. The ideal candidate would have the ability to confidently oversee specific kitchen sections and with a proven track record of upholding the highest standards of culinary excellence and contributing to the overall success of the dining experience.

This position reports to the Head Chef.

Location: The Rubens at the Palace, Victoria, London

Employment Type: Full-time

Working Pattern: Shift work (5 days on, 2 days off)

Salary: £30,000 per annum + service charge

Key Responsibilities of a Chef de Partie - Pastry:

  • Organize and prepare your pastry section each day, ensuring all tools and ingredients are ready for service.
  • Support senior chefs in the preparation and execution of desserts and pastries, ensuring high-quality results.
  • Prepare a variety of sophisticated desserts for afternoon tea, ensuring they meet luxury hotel standards.
  • Guide and train junior members of the team in pastry techniques and kitchen standards.
  • Ensure cleanliness and adherence to health and safety regulations in your section.
  • Keep your section clean, efficient, and well-stocked, ensuring smooth service.
  • Manage inventory and order necessary ingredients, ensuring your section is always fully stocked with quality supplies.

  • Exceptional skills in pastry techniques including creating a range of desserts, pastries, and baked goods, with an emphasis on quality and creativity.

  • Excellent organisational skills to manage your section, including overseeing daily production, section ordering, and maintaining a clean, orderly workspace.
