We are looking for a Chef de Partie to work predominantly based on our Sutton site in Surrey in our friendly hard-working team. A passion for cooking tasty, fresh, healthy food is a must! The areas of work will include supporting the catering team by helping with service and preparing/serving/cooking items for our patients, staff, and visitors. Ensuring that our high standards are maintained and improved. Assisting in ensuring the smooth operation in all areas of catering services including wards, functions, and retail areas.
It would be beneficial if you have worked in a hospital catering environment (or similar) previously (but this is not essential), have great customer care, good IT skills, are self-motivated, possess excellent organisational skills and have plenty of experience of working as part of a team. It would be ideal if you have worked in a similar role, bringing experience, knowledge and enthusiasm.
Main duties of the job:- Assisting in the safe production and monitoring of meals and catering services.
- Ensure hygienic working practices are carried out and to monitor the standards set within the department on a day-to-day basis.
- Ensuring that food for staff, patients, visitors and functions is of the highest possible standard on the NHS Wards, PP Wards, Crèche (Sutton Only), Restaurants, Grill Bars, Chefs Theatre commensurate with financial constraints.
- The preparation, presentation and service of food items for patients, crèche, staff and functions, using standardised recipes, to quality standards set by the Operational Manager, Head of catering, and Head Chef.
- Ensure that all food storage, preparation and service of all foods meet the temperature guidelines stipulated in the Food Safety (Temperature Control) Act 1995 and to record all food temperatures.
- Responsible for ensuring that all menu items are available in-service areas throughout service times, and that food service staff are aware of correct portion sizes in accordance with main production plan.
- Liaise with the Stores personnel, Head Chef and Sous Chef to ensure that adequate food items are available to produce the appropriate menu items.
- Assist in the planning and review of staff, patient and function menus.
- Ensuring the areas are cleaned in accordance with the cleaning schedules, this includes chefs cleaning own areas.
- Ensure all HACCP are adhered to.
- Specific Experience
- Essential criteria: A levels or City & Guilds 7061/7062/7063 or NVQ1/2/3; A recognised qualification in Maths & English; Demonstrable experience of working within catering.
- Desirable criteria: Knowledge/experience gained within an active, working hospital kitchen.
- Essential criteria: Accurate data entry skills; Ability to communicate clearly, both written and verbally; Knowledge of fresh food production.
- Desirable criteria: Evidence of basic knowledge of creating dishes from recipes.
- Essential criteria: Ability to undertake a support role; Ability to work as part of a team; Excellent communication skills and ability to use initiative.
- Essential criteria: Able to understand and follow standard operating procedures; Experience and knowledge of duties required to support senior staff gained from experience in a similar role; Awareness and ability to follow food hygiene best practice; Good understanding of task prioritisation and demonstration of practice; Basic understanding of quality management and experience of delivering good quality service.
- Desirable criteria: Dietary, nutritional & allergen training.
- Essential criteria: Able to follow written instructions including making changes and amendments when necessary; Attention to detail and accuracy; Confidence to act within the parameters of the role; Willingness to respond to direction whether working in a team or alone; High standard of personal hygiene.
