FOOD & BEVERAGE MANAGER

The Roseate Edinburgh, a distinguished five-star boutique hotel, is gracefully set across two impeccably restored Victorian townhouses. Located just five minutes from Haymarket railway station and under 20 minutes from Edinburgh Airport, the hotel offers an elegant city retreat where heritage meets contemporary sophistication. Rich in character and timeless charm, it provides a sanctuary of refined comfort in the heart of Scotland’s capital.

The Dunstane Restaurant & Bar, located within the hotel, showcases seasonal Scottish produce and a thoughtfully curated drinks menu, offering guests and locals an intimate and stylish dining experience. Whether it\’s whisky tastings, cocktail evenings, afternoon tea in the garden, or bespoke private events, we aim to create standout moments in every guest interaction.

We are now looking for a Food & Beverage Manager to lead our dynamic and growing team. This is an exciting opportunity for someone ready to take ownership of our F&B operation, elevate service standards, and drive commercial success. The ideal candidate will:
• Have a proven track record in F&B management, preferably within a luxury boutique or 5-star hotel setting
• Be commercially aware and confident in identifying and developing sales opportunities across restaurant, bar, events, and afternoon tea service
• Demonstrate strong leadership and team development skills
• Be organised, with the ability to manage rotas, stock, suppliers, and departmental admin efficiently
• Thrive in a fast-paced environment, working flexible shifts including weekends and evenings
• Be passionate about food, drink, and delivering exceptional customer service
• Show creativity in improving service delivery, menu ideas, and event execution
• Be experienced in health & safety and food hygiene compliance
• Have excellent communication skills, with the ability to inspire a team and engage with guests in a warm, professional manner

Responsibilities include:
• Full responsibility for the day-to-day running of the Dunstane Restaurant & Bar and all F&B outlets and delivering seamless MICE events at the hotel with the hotel teams.
• Leading and motivating the team to deliver consistent, high-quality service
• Managing rotas, recruitment, training, and performance reviews
• Working closely with the Head Chef and Management team to plan and execute seasonal menus, events, and promotions
• Driving sales through upselling, local networking, and partnership opportunities
• Managing stock, supplier relationships, and ensuring cost control targets are met
• Maintaining compliance with food safety, licensing, and health & safety regulations
• Ensuring excellent communication and collaboration between F&B, kitchen, and front office departments

Entry Requirements:
• Previous experience in a senior F&B management role, ideally within a 5-star or luxury hospitality environment

· Strong expertise in bar operations, including stock control, cocktail curation and the development of seasonal drinks menus

· In-depth knowledge of premium wines, whiskies and spirits, with the ability to guide and train the team accordingly

· Hands-on experience in leading à la carte restaurant service, with the confidence and capability to oversee a smooth and refined dinner operation at The Dunstane Restaurant & Bar in the evenings

• Strong leadership skills and ability to manage and motivate a team
• To work a variety of shifts including weekends, evenings and public holidays
• Excellent spoken and written English
• Eligibility to live and work in the UK
