We have a fantastic opportunity for a Senior Sous Chef, this position would suit a Sous Chef or Senior Sous Chef looking for their next big step or for an exciting new challenge. You will be leading a brigade of chefs as part of the culinary team and developing new and exciting dishes for our stunning Sun Pavilion. Key Responsibilities
- Food Preparation: Control and direct the food preparation process. Create accurate recipes, menus, and costings. Ensure food is delivered to high standards within set timeframes.
- Kitchen Operations: Oversee daily kitchen operations to direct teams and maintain or increase profit margins on food.
- Procurement: Utilise procurement systems for food ordering and time & attendance monitoring. Determine food inventory needs, stock, and place orders.
- Team Management: Manage and work closely with chefs of all levels. Accurately schedule team members based on business levels and budget constraints. Train and manage your team in line with company culture.
- Menu Development: Produce menus, concepts, and new dishes relevant to your area. Monitor and maintain the budgeted food cost, seeking ways to improve profitability.
- Compliance and Safety: Ensure the kitchen meets all regulations regarding sanitary and food safety guidelines, uphold expected food hygiene practices in line with statutory and company standards.
Skills & Requirements
- NVQ Level 3 or Culinary Arts Degree
- Level 2 Food Safety and Health & Safety in the Workplace
- Minimum 2 years' experience at Sous Chef level or higher
- Awareness of manual handling techniques and COSHH regulations
- Excellent knowledge across all kitchen sections
- Ability to produce high-quality food
- Strong team management and player skills
- Attention to detail and numeracy skills
