Job Description

THE ROOF GARDENS

The Roof Gardens is a social club in the sky, 100 feet above the streets of Kensington. Close to an acre of private gardens with views across London to the horizon, The Roof Gardens is a new generation members club. A place of escape, bursting with wildflowers, olive and mulberry trees, grassy lawns and hidden nooks. An Art Deco gem created in 1938, The Roof Gardens has a legendary legacy. People have come together, the curious, creative, riotous, radical and respected alike. Every chapter scatters their seeds in the soil; we are merely the latest gardeners in its ongoing story.

Created for season-by-season, morning-to-moonlight experiences. Al fresco Italian in the Walled Garden, vibrant, healthy twists on club classics in the Sun Pavilion, live performances and cosy cabanas in the Spanish Garden and late-night revelry in our den of decadence, the Biba Bar. Curated talks, debates, supper clubs and intimate celebrations in Esme's private villa. The Roof Gardens' community is united by open-mindedness, optimism and kindness, not defined by background.

THE ROLE

We are looking for an experienced Assistant Restaurant Manager to join The Roof Gardens and one of our restaurants. This is a unique opportunity to be involved in multiple dining concepts and as a pivotal member of our front of house team, you will support the Restaurant Manager to build your team, put processes and operations in place to ensure first class service, whilst becoming a familiar and friendly face for our members. In this role you will be injecting your personality into your work and inspiring the team to deliver a warm and memorable guest experience.

Your main responsibilities will include:

Operations, Financial & Inventory Management

  • With Restaurant Manager (RM) create, innovate, organise & control Restaurant operations, and the efficient and effective running of the service to support overall member/guest satisfaction, whilst inspiring the team members.
  • Adhere to financial targets and budgets, optimising costs and expenses while maintaining high service standards.
  • Minimise expenditure through the diligent management and control of restaurant consumables and equipment.
  • Support RM to implement and update operational policies and standards
  • Lead and ensure full adherence to the Manager on Duty (MOD) manual which includes all of the operating requirements that must be followed at all times.
  • Work closely with the RM and Head Chef to create new dishes and develop the restaurant menu, keeping in line with latest food trends.
  • Oversee the standard and quality of all food & drink; you and your team will serve as the final quality check for everything that is served and delivered to our customers
  • Ensure the tone of all Food and Beverage operations is consistent with the brand values of The Roof Gardens (TRG).
  • Ensure all restaurant employees are aware of and understand the menu/ new menus, daily specials, vegetarian, party bookings and service responsibilities. All team members must attend menu tasting and be issued with comprehensive notes on all dishes served.
  • Ensure all menus and allergen sheets are up to date and available in all stations. And display an excellent knowledge of all food menus, its allergens and ingredients
  • Guarantee all food and drink is served promptly by the restaurant team and charges are made to the correct table.
  • Confirm all restaurant revenue is correct and accurately recorded. Accurately complete the necessary internal accounting/finance requirements.
  • Support RM to organise and control all aspects of the Restaurant and private dining operation with strategic planning for growth.
  • Ensure regular inventory audits occur in coordination with management and Stock Controller
  • To Deputise for the RM as required.
  • To carry out any other reasonable duties and responsibilities as assigned.

Members and Service

  • Support the RM in leading our exceptional Restaurant team to set up and deliver a unique guest experience.
  • Uphold impeccable service standards, guiding the restaurant team in delivering an exceptional dining experience.
  • Utilise your excellent hosting skills, outgoing personality and great personal style, to build excellent relationships with Members and guests. Answer their queries, deal with complaints and ensure their Customer Journey is the best it can be. Ensure Club Management are made aware of any issues as quickly as possible.
  • Work collaboratively with RM and Head Chef and promote positive communication between floor teams, management and kitchen team to ensure seamless food and service delivery.
  • Communicate clearly with the Kitchen and Bars teams to ensure they are aware of members' and guests' requirements at all times.
  • Enhance offerings and curate memorable experiences for our Members/guests.
  • Develop and maintain a culture of engagement with the Members community and establish relationships as appropriate
  • Effectively manage multitasking and high-pressure situations while maintaining service standards.
  • Ensure a thorough knowledge of Members Events' programmes at TRG

People/Team

  • With the RM identify and recruit talent to Food and Beverage operations of TRG in line with the Company's policy and procedures
  • Ensure all new team members receive full inductions and training e.g. service standards, POS/reservation systems, and any other procedures or systems required to fulfil their job.
  • Lead, encourage, inspire and support team members to perform their roles to the best of their abilities through regular training and skills' development, fostering a culture of excellence.
  • Conduct performance evaluations and provide regular feedback to team members, recognising and addressing areas for improvement
  • Plan, prepare and communicate the team rota on a regular basis and cover shifts if required

Compliance

  • Monitor and maintain standards of presentation not only of team but of dining/ public areas (cleanliness and maintenance) and report any defaults to the relevant departments.
  • Support RM to regularly review and update Standard Operating Procedures (SOPs)
  • Ensure adherence to health & safety, and hygiene regulations and any other company policy and procedures.
  • Lead and ensure full adherence and compliance to the premises licence operating requirements.

The skills and experience which will help you succeed in this role

  • Proven experience as a Restaurant Manager/ Assistant Restaurant Manager in similar luxury /high end, ‘lifestyle' F&B environment
  • Hospitality qualifications are advantageous, but not essential
  • Passion for and knowledge of food and beverage /culinary arts, hospitality , service and the London restaurant scene
  • A hands-on, proactive and enthusiastic leader with excellent team-building skills
  • A passion for delivering exceptional guest experiences, with a commitment to service excellence
  • Warm, personable and professional at all times
  • Excellent level of English spoken and written with a good level of numeracy
  • Exceptional communication skills and rapport-building abilities
  • Creative and effective problem-solving and decision-making skills
