THE OPPORTUNITY: We’re an independent, upmarket restaurant and cocktail bar in the heart of Edinburgh, looking for an accomplished Assistant Restaurant Manager or an experienced Restaurant General Manager looking to develop up to a larger, upmarket restaurant. The role sits in a team of two AGMs reporting directly to the GM in a unique structure.
EVENING SERVICE: Leading the evening service and guest experience as if a restaurant separate from the more casual day offer. The role is an evening shift only role and you would lead the evening service and team from 3pm onwards with the kitchen closing at 9pm. You would normally close the restaurant ending your shift around 11pm. Although the role is PM shifts only, 5 days on and 2 days off; you would need to be fully flexible and at times you may support your team on a day shift, be involved in projects and have integral influence to the success and leadership of the restaurant and team.

Fresh produce, detailed menus in an upmarket destination venue with a highly engaged and passionate team delivering an exceptional guest experience.
ABOUT YOU: You would be very specific in choosing your next career move in a leading restaurant and bar brand. You would be highly accomplished in managing restaurants and bars and leading teams in known high street brands. You would be able to talk through your previous accomplishments and how you have developed your career. You are an exceptional communicator, natural coach and mentor with an obsession to deliver a great guest experience.
WHAT WE ARE LOOKING FOR: You have been working as an Assistant Restaurant Manager or Restaurant General Manager in a busy environment for the past few years. You’re first-class in everything you do and want to find an environment that’s as obsessive about quality as you are. You’re a great leader who really cares about your people. You have a mentoring approach, coaching and developing other members of the team is a natural focus for you. Your attention to detail is second to none; not only in the day-to-day service standards but also in your business administration, reporting and relationship with team and stakeholders. You have a genuine commitment to making people happy, the health of your team and their love for the business and its leadership is paramount. You never compromise on quality and performance of the restaurant. You have strong, hands-on experience in bar and floor management, stock management, restaurant and bar opening and closing. You have had some experience of a PnL and a general understanding able to lead a restaurant and bar in the absence of your GM. You have exceptional communication skills, detailed in reporting and business administration and able to present business insights week to week.
