You will provide supportive leadership to kitchen staff throughout the dinner service primarily at Bridgeman’s Chophouse but will also assist in other culinary areas as needed. Primary Duties & Responsibilities Prepare meals and food to meet the specifications of guests in a timely manner Ensure kitchen staff adheres to set standards, procedures, department rules and sanitation requirements Maintain high standards of food safety and hygiene throughout the kitchen; ensure proper food temperatures when cooking and proper storage afterward; keep all workstations and kitchen equipment clean, organized and sanitized Collaborate with the culinary team to develop new menu items and improve existing recipes Ensure that all dishes are prepared to the highest quality standards before serving. Address any issues that arise during service promptly to maintain smooth operations Train and mentor kitchen staff in culinary techniques and best practices Help manage kitchen schedules, ensure adequate staffing for peak service times Manage kitchen inventory and ensure supplies are fresh and of high quality and waste is minimized Take charge of kitchen opening, closing and other side duties as directed by the Executive Chef or Chef de Cuisine Maintain regular and punctual on-site attendance with the ability to work a flexible schedule including days, evenings, weekends, and holidays when business requires Job Requirements Education/ Experience: High school diploma or equivalent required Degree in Culinary Arts or equivalent preferred Three to five years of progressive culinary experience in a hotel or related fine-dining establishment required Skills Proven management and leadership skills Budget, forecast, and cost control experience Excellent communication skills with guests, team members, and management Food preparation techniques Physical & Mental Requirements Ability to frequently lift, carry, push, pull, or otherwise move up to 50 pounds and occasionally lift, carry, push, pull, or otherwise move up to 75 pounds See clearly both near and far (to detect cleanliness and discrepancies) Hear at a basic level and communicate with coworkers and guests Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals Ability to stand for extended periods of time, sometimes more than 8 hours Ability to apply commonsense understanding to carry out instructions Ability to multitask and work effectively in a high-demand, fast-paced environment with changing variables Work Environment The noise level in the work environment is usually moderate This position occasionally works near moving mechanical parts This position requires the ability to work in temperatures of varying degrees Who We Are The Roaring \’20s are alive and prosperous in Chattanooga at the Historic Read House Hotel.
