We have a fantastic new vacancy for a Sous Chef at Courtyard by Marriott Edinburgh West. Courtyard by Marriott Edinburgh West is a 160 bedroom hotel situated on the leafy Heriot-Watt University campus, with a state-of-the-art lobby and 'The Avenue' at the centre of it all. The hotel is managed by Lighthouse Hotel Management, which is the operational arm of the Molo Hotel Group.

As the Sous Chef, you will play a key leadership role in our kitchen team, supporting the Head Chef in the daily running of the kitchen and ensuring the smooth delivery of all food service periods. You will be working alongside a team of dedicated chefs and kitchen team members, driving the high standards of food quality, presentation and consistency while maintaining a positive and efficient working environment.

  • Kitchen Leadership: Support the Head Chef in overseeing the day-to-day operations of the kitchen, helping to lead, motivate and develop the kitchen team. Ensure all service periods run smoothly and maintain high standards across breakfast, lunch and dinner services.
  • Dining Experience: Work alongside a passionate team that puts pride and care into every dish prepared. Your attention to detail and commitment to quality will ensure every guest receives a consistently excellent dining experience.
  • Passion for Excellence: In line with legislation and hotel policies and procedures, ensure the highest standards of food safety, food hygiene and allergen compliance are maintained. Actively monitor kitchen practices, minimise cross-contamination risks and ensure the kitchen team follows all regulatory requirements.
  • Kitchen Standards: Help maintain a clean, organised and compliant kitchen environment, ensuring all workstations operate efficiently and safely. Support stock control, ordering, and food cost management while maintaining quality standards.
  • Team Development: Work closely with the Head Chef to help train and mentor junior chefs, supporting their development and helping to build a strong, collaborative kitchen team.
