Description Job Title:Bakery Development Chef
Based At:On Site
Responsible To:Head of Food Innovation and Development
Key Purpose:The post-holder will be responsible for creating and developing new products for the bakery side of the business.
The Bakery Development Chef will also oversee the handover, trials and first production of bakery products with a focus on quality, consistency and ensure products are made in the correct manner and in line with specifications.
The Bakery Development Chef will drive product improvement and ensure that the products are the best that they can be.They will benchmark products against competitors and drive innovation while training and assisting the bakery staff to become proficient in their roles and improve their skills.The Bakery Development Chef will liaise with the NPD staff to aid in the creating of specifications by supplying information on product assembly, cooking and stage photos.
Operational
Liaising with the Head of Food, Innovation and Development, Food Innovation Manager, the Innovation Chef, Quality, Production, Technical, Purchasing, Finance, Sales and the C Suite to introduce new products/ranges to the business Bakery, Chilled and Frozen. (This list is not exhaustive and more varieties may be required as the business grows.) Present exciting new ideas and concepts to customers
Carrying Out Product Development. To include
- •Concept Development
- •Concept Presentation and Sign Off
- •Costings
- •Kitchen and Pre Production Trials – (To include training of factory kitchen staff and line staff.)
- •Ensure all requirements are covered in accordance to BRC
- •Shelf Life Analysis – both sensory in house and external micro
- •Product handovers to factory
- •Product launch
- Overseeing the integration of new products into the Bakery this should include: •
- Sourcing New Raw Materials
- •Ensuring the NPD Technologists have all information needed in ample time to create specs and labels
- •Product Handover to Factory Team
