The newly built hotel, impeccably designed to harmonise with surrounding heritage buildings, is just moments away from the city’s most iconic attractions, including Three Royal Parks, Buckingham Palace, Harrods, and Big Ben. Its 190 light-filled guest rooms and suites have been exquisitely designed by Peter Marino; its gathering spaces include several world-class restaurants and bars, including Brooklands helmed by Michelin-starred Chef Director Claude Bosi; the idyllic Peninsula Spa, and a luxury retail arcade.

The Peninsula London is seeking to hire a talented Operations Director for our Brooklands Operations, encompassing Brooklands Restaurant, Brooklands Bar, and the Tasting Room. The Operations Director will demonstrate exceptional experience in overseeing our operations, ensuring the provision of quality food and beverage service as an industry leader, and maximising turnover while maintaining the highest possible departmental revenue and profit margin.

Brooklands restaurant offers contemporary European cuisine from Michelin-starred Chef Director, Claude Bosi, widely considered to be one of Britain’s leading culinary lights, as well as top-flight libations and cigars in a collection of distinctive spaces inspired by the classic eras of British aviation and motorsport. The venue, designed by London architects Archer Humphryes, comprises a sleek main dining room with a sweeping outdoor terrace with enchanting panoramic views across London’s skyline, taking in iconic landmarks like St Paul’s and the City, the London Eye, and Battersea, as well as over three Royal Parks (Hyde Park, Green Park, and St James Park).

  • Exceeds guest expectations with service, in keeping with the Peninsula Service Principles, focusing on the core principles.
  • Looks for improvement for better service standards with a general theme of anticipating the guests' needs.
  • Ensures productivity levels are concurrently met in the Restaurant, Bar, and Tasting Room and understands the need to prudently manage utility/payroll costs within stipulated budgetary requirements.
  • Ensures the monthly and annual revenue targets are met and analyses all operational data to manage business periods, client needs, and forecast future business.
  • Manages the day-to-day operations ensuring the highest levels of guest satisfaction.
  • Ensures successful and profitable leadership of the outlet.
  • Suggests and develops sales strategy, promotions, activities, and budget to support the hotel in preparing the annual F&B marketing plan and budget.
  • Hires, develops, motivates, supervises, and performance manages department colleagues in maintaining a culture in compliance with mission, vision, values, and core principles.

General requirements:

  • Minimum 3-year experience in a similar role within a Luxury Hotel environment with similar standards and expectations.
  • Is a natural organiser, highly detailed, and able to engage with guests.
  • Strong people leader having prior experience managing a team.
  • Excellent time management, communication, and organisational skills, highly adaptable, naturally positive.
  • Fluent English communication proficiency. Expertise in a second language would be desirable.
