As part of our premium culinary offering, The Pembroke features a Mediterranean-inspired restaurant showcasing vibrant flavors, seasonal produce and elevated dining. To further enhance our operations, we are seeking an accomplished Head Chef to lead this venue, delivering exceptional Mediterranean cuisine and unforgettable experiences for our members.

ROLE OVERVIEW

The Head Chef will oversee all aspects of the Mediterranean-style restaurant within The Pembroke. The successful candidate will be responsible for the creation, preparation and presentation of an exceptional Mediterranean-inspired menu that aligns with the club’s high standards, ensuring an outstanding dining experience for members. This role also involves managing a team of chefs, maintaining kitchen operations, controlling food costs and upholding the highest levels of cleanliness and safety. As the leader of the restaurant’s kitchen, the Head Chef will play a pivotal role in shaping the culinary identity of the venue. They will work closely with the Executive Chef and management team to ensure the offering reflects the club’s reputation for excellence, luxury and exclusivity.

RESPONSIBILITIES

  • Work in collaboration with the Executive Chef to create innovative, seasonal menus that reflect both the club’s culinary philosophy and members' preferences.
  • Ensure that each dish produced in the restaurant kitchen meets the club's exacting standards for taste, presentation and quality.
  • Manage, train and motivate a team of chefs, sous chefs and kitchen assistants to ensure efficient operation in the kitchen.
  • Delegate tasks appropriately and ensure all members of the kitchen team are working effectively and to the highest standards.
  • Oversee staffing levels, scheduling and performance management within the kitchen team, ensuring smooth operations during service.
  • Foster a collaborative and positive working environment where creativity and professional development are encouraged.
  • Oversee the day-to-day running of the kitchen, ensuring operations are efficient, organised and in line with both the club's standards and health and safety regulations.
  • Ensure that kitchen stock levels are maintained within budget and that all ingredients are fresh and of the highest quality.
  • Minimise waste through effective stock management, portion control and efficient kitchen practices.
  • Ensure that the kitchen adheres to strict hygiene and health and safety regulations, including proper food handling, sanitation and safety protocols.
  • Ensure that each dining experience is exceptional, personal and tailored to the needs and preferences of the club’s members.

REQUIREMENTS

  • At least 5-7 years of experience in a high-end restaurant, private members’ club or luxury hotel kitchen, with a minimum of 2-3 years in a senior chef role such as Head Chef or Sous Chef.
  • Experience in managing a kitchen team, with a focus on maintaining the highest culinary standards in a busy environment.
  • Advanced knowledge of modern and classical cooking techniques, with expertise in menu design, food preparation and presentation.
  • Proven leadership skills, with the ability to motivate and inspire a team, manage staff performance and ensure high standards of efficiency and quality.
  • Strong understanding of food cost management, budgeting and financial reporting.
  • Knowledge of food safety standards and practices, including HACCP and COSHH.
  • A high level of attention to detail in both food preparation and presentation, ensuring consistency and perfection in every dish.
  • Ability to maintain the privacy and confidentiality required when working with high-profile members.
  • Ability to perform effectively and maintain high standards even during peak hours or high-pressure situations.
