We are now seeking an exceptional General Manager to lead The Palomar. This is a rare opportunity to take the helm of an iconic restaurant and help shape its future, while honouring everything that has made it so loved.
Our intimate space is bursting with the vibrant colours, flavours, sounds and aromas of the rich cultures of Southern Spain and Italy, North Africa and the Levant. As General Manager, you will be the centre of this experience: setting standards, nurturing talent and ensuring every service feels effortless, generous and memorable.

- Commercially astute, with a strong understanding of budgets, forecasting and profitability, and the ability to balance creativity with rigour.
- Highly organised and detail-driven, ensuring excellence across compliance, food safety, health & safety and licensing.
- Experienced and curious, with a proven track record at General Manager or senior management level in a high-quality, high-energy hospitality environment, and an eye on the evolving London dining scene.
