The Restaurant Manager for Twenty8 is responsible for the full operational, commercial, and guest experience performance of the restaurant. This role leads the team to deliver exceptional service, ensures brand standards are upheld, and drives revenue and profitability while maintaining a strong culture aligned with NoMad values.

  • The Restaurant Manager is expected to be professional at all times, act as a positive ambassador of The NoMad, adhere to company policies (including health & safety, HR, and the employee handbook), and role‑model NoMad values in every interaction.

Main Duties & Responsibilities

  • Lead daily restaurant operations, ensuring seamless service delivery.
  • Drive exceptional guest experience, handling VIPs, complaints, and service recovery.
  • Ensure strong communication between kitchen, bar, and front‑of‑house teams.
  • Oversee reservations, table management, and pacing to maximise covers and experience.
  • Maintain consistency in food, beverage, and service standards.
  • Ensure compliance with hygiene, health & safety, and licensing regulations.
  • Support and execute activations, seasonal menu changes, and special events.
  • Drive revenue through effective floor management and upselling culture.
  • Monitor daily, weekly, and monthly trading performance (covers, spend per head, revenue).
  • Manage labour costs in line with the budget.
  • Support budgeting and forecasting processes.
  • Ensure stock control, ordering, and inventory accuracy.
  • Oversee billing, cash handling, and financial controls.
  • Ensure menus, pricing, and descriptions are accurate and aligned with brand standards.
  • Maintain SOPs and ensure team adherence.
  • Support marketing initiatives and ensure brand consistency in the restaurant.
  • Manage guest feedback tracking and implement improvements.
  • Ensure reporting and documentation are completed accurately and on time.

Essential Skills & Experience Required

  • Experience within a hotel or premium hospitality F&B environment.
  • Strong organisational skills and attention to detail.
  • Commercial awareness and financial literacy.
  • Excellent written and verbal communication skills.
  • Proficiency in Microsoft Office, particularly Excel.
  • Proficiency in Adobe InDesign.

Desirable

  • Experience within a lifestyle or luxury hospitality brand.
  • Exposure to events, private dining, or multi‑outlet operations.
  • Understanding of outlet pacing and revenue optimisation.
