The Role

We are looking for an experienced and inspirational Head of Bars to lead the bar operations at THE NICI Bournemouth.

Reporting to the Director of Food & Beverage, you will be responsible for the strategic and operational leadership of all bar venues across the hotel, ensuring exceptional guest experiences, outstanding beverage quality, and industry‑leading service standards.

You will lead, inspire, and develop your management and bar teams while driving innovation, profitability, and operational excellence across the department.

Key Responsibilities

  • Provide strategic leadership for all bar operations across THE NICI Bournemouth.
  • Lead, coach, and develop the Bars Management team and bartenders to deliver exceptional guest experiences.
  • Drive service excellence, ensuring consistently high standards across every bar outlet.
  • Develop innovative beverage menus and seasonal cocktail programmes in collaboration with suppliers and the Food & Beverage leadership team.
  • Manage departmental budgets, labour costs, stock control, gross profit performance, and financial targets.
  • Analyse sales performance and implement initiatives to maximise revenue and profitability.
  • Build strong supplier relationships and oversee beverage purchasing and stock management.
  • Lead recruitment, succession planning, training, and performance management across the bars team.
  • Ensure compliance with licensing legislation, health & safety, and food safety standards.
  • Work collaboratively with the Restaurant, Events, Kitchen, and wider hotel teams to deliver seamless guest experiences.

About You

  • Proven experience as a Head of Bars, Senior Bars Manager, or multi‑outlet Bars Manager within a luxury hotel, premium hospitality, or lifestyle venue.
  • An inspirational leader with a passion for developing high‑performing teams.
  • Extensive knowledge of wines, spirits, cocktails, premium beverages, and current industry trends.
  • Commercially focused with strong financial acumen and experience managing budgets and profitability.
  • Excellent organisational, communication, and leadership skills.
  • Passionate about delivering memorable guest experiences through exceptional hospitality.
  • Flexible to work evenings, weekends, and bank holidays when required.
