The Ned boasts 10 restaurants, each serving a unique style of cuisine from around the world. As Executive Sous Chef, you'll be the right hand of our Executive Head Chefs in everything from day-to-day operations, people and team management, menu creation, budgeting and P&L, and everything in between. Our restaurants serve a multitude of options from caviar, lobster thermidor, and beef rossini, to sushi, BBQ, and shepherd's pie - so this is the perfect role for a senior chef leader to work with our kitchen teams on ensuring the highest levels of service for our guests.

Where will you be working? The Ned and Ned's Club are a global collection of hotels, clubs, spas, and restaurants for like-minded individuals to meet, work and have a good time. The Ned launched in 2017 in the heart of the City, in the former Midland Bank headquarters. The Ned City of London houses Ned's Club - a private members' space, gym and rooftop - alongside a public spa, a full floor of events spaces, ten restaurants and bars and 248 hotel bedrooms.

Reporting to our Executive Head Chefs, you will:

  • Lead the kitchen teams in the production of our food, ensuring that all dishes are cooked and presented to our exceptional Ned standards.
  • Work with the restaurant Head Chefs to ensure all commercial deliverables are achieved - including menu costing and creation, budget and P&L management, weekly and monthly reporting, recruitment and labour spend, guiding and training the team on areas for improvement.
  • Use your leadership experience to drive a culture of high performance in our kitchens, setting the standards and performance expectations for Head Chefs, and regularly providing feedback.
  • Guide and develop your kitchen leadership team, sharing accountability and growing the future talent of The Ned.
  • Be a guardian of food quality and presentation, providing coaching and feedback to the Head Chefs where needed.
  • Be ultimately accountable for a safe and clean kitchen environment, protecting our guests and team from any possible harm.
  • Protect our excellent food safety ratings and audit standards by always keeping a close eye on procedures and practices, ensuring Head Chefs keep impeccable records, and work with them on implementing action plans where necessary.

What you can bring to the role:

  • Previous leadership experience as a Head Chef with a proven track record of delivering outstanding food and people management.
  • High standards are essential, and you must demonstrate the ability to challenge and drive high performance from your teams.
  • Experience across multiple cuisines and concepts, with the ability to adapt to a diverse culinary offering.
  • An organised and detailed manner is necessary, as impeccable record keeping is needed to maintain records for our safety and audit standards.
  • A commercial mindset is needed in all our leaders, evidence of achieving and exceeding KPI's will go a long way.
  • Food safety qualification (Level 3 minimum; Level 4 preferred).
