The Ned boasts 10 restaurants each serving a unique style of cuisine from around the world. As Senior Sous Chef you will support your Head Chef in leading one of the kitchens at The Ned, taking the reins whenever the Head Chef is not present.

Where will you be working? The Ned and Ned’s Club are a global collection of hotels, clubs, spas, and restaurants for like-minded individuals to meet, work and have a good time. The Ned launched in 2017 in the heart of the City, in the former Midland Bank headquarters. The Ned City of London houses Ned’s Club - a private members’ space, gym and rooftop - alongside a public spa, a full floor of events spaces, ten restaurants and bars and 250 hotel bedrooms. At The Ned, we have restaurants in almost every cuisine, from pan‑Asian to American diner, and Italian to fine dining.

Responsibilities

  • Work with the Head Chef to lead the team in the production of our food, compiling the daily mise‑en‑place, and ensuring that all food is cooked and presented to our exceptional Ned standards.
  • Lead the kitchen operations whenever the Head Chef is not on duty, deputising and handling the day‑to‑day.
  • Support with all people leadership tasks – including team recruitment, development and performance chats, onboarding new starters.
  • Guard food quality and presentation, monitoring all food leaving the kitchen and providing coaching and feedback to the team where needed.
  • Create and monitor a safe and clean kitchen environment, protecting guests and team from any possible harm.
  • Protect food‑safety ratings and audit standards by keeping a close eye on procedures and practices, keeping impeccable records, and implementing action plans where necessary.
  • Prepare all meat, fish, poultry, and vegetables.

Qualifications

  • Previous kitchen leadership experience with a proven track record of delivering outstanding food and people management.
  • High standards are essential – customers and guests expect the best.
  • An organized and detailed manner is necessary, as impeccable record‑keeping is needed for safety and audit standards.
  • A commercial mindset is required – support the Head Chef in delivering excellent financial performance and results.
  • Creative flair welcomed – menus change seasonally and chances to support food design and creation may arise.
  • The kitchen can be high pressure, so a calm demeanor and genuine passion for exceptional food is essential.
  • Desire to learn and progress toward the next Head Chef role is preferred but not essential.
