As Restaurant & Bars Manager, you will take ownership of the leadership, performance, and guest experience across all food and beverage operations at Pine Trees Hotel, including breakfast, lunch, dinner, bars, terraces, room service, private dining, and events. Working in close partnership with the Head Chef, you will ensure seamless front- and back-of-house collaboration, delivering refined, warm hospitality in line with AA Red Star luxury standards and Small Luxury Hotels of the World (SLH) expectations. This is a highly visible, hands-on role where you will lead from the floor, inspiring your teams and creating memorable guest journeys.

Responsibilities
  • Lead the day-to-day operation of all restaurant and bar services, ensuring consistent quality and service.
  • Be a visible presence during service, engaging confidently with guests and leading teams by example.
  • Deliver a refined, intuitive service culture aligned with luxury hospitality standards.
  • Work closely with the Head Chef on service flow, menu delivery, tastings, and food-led events.
  • Oversee the delivery of private dining, events, terrace service, and seasonal offerings.
  • Recruit, train, motivate, and develop high-performing restaurant and bar teams.
  • Manage labour, rotas, productivity, stock, margins, and wastage within agreed budgets.
  • Ensure full compliance with health & safety, food hygiene, and licensing regulations.
Qualifications
  • Proven experience managing restaurant and bar operations within a quality or luxury hotel environment.
  • A hands-on leadership style with excellent communication and coaching skills.
  • Strong attention to detail and a passion for service excellence.
  • Experience managing rotas, labour costs, stock control, and service standards.
  • The ability to inspire, motivate, and build engaged, high-performing teams.
  • Flexibility to support wider hotel operations, including acting as Duty Manager when required.
