The Role

Role As Assistant Restaurant & Bar Manager, you will support the Restaurant & Bar Manager and wider operations team in delivering exceptional food and beverage experiences across Meldrum House Hotel.

This is a hands-on leadership role where you'll help lead daily service across the restaurant, bar, drawing room, dining domes, room service, golf and events operations, ensuring guests receive warm, attentive and memorable hospitality at every touchpoint.

Working closely with kitchen, events, reservations and front-of-house teams, you'll help maintain exceptional service standards while coaching and developing team members to perform at their best.

Joining the dedicated Reception department, you will

  • Lead by example on the floor, delivering warm, confident and attentive guest service.
  • Support the training, coaching and development of restaurant and bar team members.
  • Assist with team rotas, shift planning and workforce deployment to ensure effective staffing levels.
  • Maintain strong communication between front-of-house, kitchen, events and reservations teams to deliver exceptional guest experiences.
  • Support menu launches, food and beverage training, tastings, service trials and special events.
  • Assist with departmental stock control, ordering procedures, cash handling and wastage management.
  • Drive revenue growth through upselling, product knowledge and proactive guest engagement.
  • Ensure compliance with food hygiene, health & safety, licensing and allergen regulations.
  • Support performance management, one-to-ones, reviews, attendance management and colleague development.
  • Maintain departmental SOPs, service standards and operational checklists.
  • Act as Duty Manager when required and provide support across other hotel departments.
  • Foster a positive, professional and high-performing team culture.
  • High guest satisfaction and service quality scores.
  • Achieve food and beverage revenue targets through effective upselling.
  • Efficient labour management and rota planning.
  • Strong compliance with health, safety, licensing and food hygiene standards.
  • Team training completion and development progress.
  • Stock control, wastage management and departmental operational efficiency.

About you

  • Previous supervisory or assistant management experience within a quality restaurant, bar or luxury hospitality environment.
  • Strong leadership skills with a hands‑on approach to service.
  • Excellent communication and team coaching abilities.
  • Sound understanding of luxury service standards and guest care.
  • Strong organisational skills with the ability to prioritise during busy service periods.
  • Commercial awareness including labour management, stock control and revenue generation.
  • Experience handling guest concerns and resolving issues professionally.
  • Ability to build effective relationships across multiple departments.
  • Experience using hospitality systems such as Seven Rooms, Zonal or similar is advantageous.
  • Flexible, resilient and passionate about hospitality and developing others.
