The Mole Resort is a premium countryside resort in North Devon, blending hotel stays, self‐catering lodges, spa and leisure, meetings and weddings with a strong, destination‐led food and drink offer.

Our Food & Beverage Manager will lead the entire F&B operation across the resort. This includes our restaurant and bars, meetings and events, weddings and banqueting, and resort food delivery. You will be accountable for commercial performance, operational standards, guest experience and team development, ensuring the offer feels seamless across every touchpoint.

This is a senior operational leadership role for someone who understands how a full resort works — not just a standalone restaurant.

The role

You will take full responsibility for the profitable and compliant delivery of all food and beverage operations across the resort. That means:

  • Leading restaurant and bar operations to deliver consistently high standards of service and presentation
  • Overseeing weddings, private dining, conferences and banqueting, working closely with the Meetings & Events team to ensure flawless delivery
  • Managing resort food delivery and in‐accommodation dining, ensuring quality and timeliness across hotel rooms, lodges and cottages
  • Driving revenue performance, labour control and margin through disciplined stock management and forecasting
  • Maintaining robust Health & Safety, food safety and licensing compliance
  • Managing systems including POS, PMS integration and guest reservation platforms to ensure accuracy, reporting integrity and commercial insight
  • Developing, coaching and retaining a high‐performing team across all F&B outlets
  • Working collaboratively with Rooms, Revenue, Sales and Leisure to ensure the overall guest journey feels cohesive

You will be visible on the floor, calm under pressure and commercially aware. You will understand how to balance service, experience and margin without compromising standards.

What we're looking for

You will already be operating at Food & Beverage Manager level within a quality‐led hotel or resort environment. You'll bring:

  • Proven experience across multi‐outlet operations including restaurant, bar, weddings and banqueting
  • Strong financial acumen, including payroll control, stock management and P&L accountability
  • Sound knowledge of food safety, licensing and Health & Safety compliance
  • Experience managing EPOS systems, PMS integration and reservation platforms
  • A clear understanding of resort operations and the interaction between accommodation, events and F&B
  • Confident leadership, with a track record of building engaged, capable teams
  • A guest‐first mindset combined with commercial discipline
