We are looking for an incredible Coppernose Café Director to join our F&B team at The Mitre, Hampton Court. The Signet Collection is a growing family of design-led boutique hotels in remarkable locations — where story, soul, and style come together. From riverside beauty at The Mitre in Hampton Court, to countryside calm at The Retreat at Elcot Park or The Barnsdale, Rutland, and our newest addition, The Alfriston in the South Downs, we are building a collection of stays with character and ambition.

This is a rare opportunity to lead one of the most exciting hospitality projects within the Signet Collection — the complete re-design and launch of our new riverside café concept. As the creative and operational force behind this flagship venue, you will shape everything from the product strategy and coffee programme to the guest experience, sustainability approach, and cultural identity of the team.

Role Overview

In this highly visible role, you will work closely with the General Manager and the wider hotel leadership to bring a distinctive, local-first, future-ready café to life — one that will set the blueprint for future Signet locations. You will lead the transformation from the ground up, crafting a concept that blends innovation, British provenance, and commercial strength, all while maintaining a strong on-floor presence to coach, guide, and inspire your team.

What you will do:

  • From building sustainable operational systems and signature products, to forging community partnerships and creating standout guest experiences, you will have the autonomy to design something meaningful, memorable, and scalable.

This is a role for a warm, culturally driven leader who thrives in boutique hospitality settings and wants to make a lasting impact on a brand-defining project.

What we are looking for:

  • 3-5 years of experience in boutique F&B or specialty coffee, with a track record of shaping or launching concepts.
  • Commercially sharp, sustainability-minded, and confident navigating operations at pace.
