We are currently recruiting for a Night Chef to join our Food Production team at The May Fair.

As Night Chef, you will be responsible for overseeing all overnight food preparation and service, ensuring our guests receive exceptional quality and consistency at all times.

Working independently and as part of the wider Kitchen Brigade, you will prepare dishes for room service, early breakfast requirements, staff dining, and support kitchen mise en place for the daytime teams.

Overview

  • Prepare and deliver high-quality food for overnight room service and hotel operations.
  • Ensure all dishes are prepared and presented to the standards expected of a five-star luxury hotel.
  • Manage the kitchen confidently during night shifts, maintaining efficiency and organisation.
  • Complete mise en place and preparation for breakfast and daytime service.
  • Monitor food quality, stock levels, and minimise waste.
  • Maintain strict food hygiene, health and safety, and HACCP standards.
  • Ensure all kitchen equipment is used safely and maintained correctly.
  • Work collaboratively with Front Office and Night Management teams to deliver exceptional guest experiences.
  • Support the Head Chef and Sous Chefs with additional kitchen duties as required.

About You

  • Previous experience as a Chef de Partie, Night Chef, or similar role within a luxury hotel, high-end restaurant, or hospitality environment.
  • Strong knowledge of food safety, allergen management, and kitchen compliance standards.
  • Ability to work independently and confidently during overnight shifts.
  • Excellent organisational and time management skills.
  • Passion for hospitality and delivering exceptional guest experiences.
  • Flexible, reliable, and able to perform well under pressure.
  • Professional appearance and a positive attitude.
