As Bar Manager, you’re responsible for operating and managing all bars within the venue. You create an environment that’s welcoming, energetic and unmistakably Little Door & Co for both guests and team. You lead from the front, investing in your team’s growth while protecting standards, margins and systems behind the scenes. From stock control and compliance to innovation and menu development, you take full ownership of the bar’s performance commercially and culturally. You’re as passionate about people as you are about product.

You’ll be organised, charismatic and meticulous, able to deliver exceptional drinks while keeping tight control of systems, stock and standards.
What you’ll be doing:
- Representing The Little Door & Co values in every shift
- Leading and developing the bar team through regular training and appraisals
- Ensuring every drink meets company specs: correct garnish, glassware and presentation
- Maintaining exceptional cleanliness and organisation behind and in front of the bar
- Taking full ownership of stock control, stocktakes and accurate reporting
- Managing product rotation, par levels and glassware levels
- Monitoring Wet GPs and positively influencing commercial performance
- Preparing financial and stock reports highlighting trends and variances
- Ensuring all sponsorship agreements are upheld and training delivered where required
- Ensuring EPOS accuracy and investigating any till discrepancies
- Maintaining all bar equipment and reporting issues promptly
- Leading recruitment, onboarding and retention for the bar department
- Ensuring all bartenders have full working knowledge of house and classic specs
- Keeping purchasing within agreed budgets and following company protocol
- Acting as Duty Manager in the absence of senior management
- Overseeing opening, closing and cleaning procedures with a clear audit trail
- Inspiring pride, professionalism and personality within the bar team
Previous experience:
- Bar Manager or Senior Bar Supervisor experience in a high-volume venue
- Strong understanding of stock management, ordering and bar financials
- Experience developing cocktail menus and maintaining specs
- Proven ability to train and develop bartenders
- A natural host who thrives in late-night hospitality
