Candidate Profile

As a Food & Beverage Cost Controller you will:

  • To have a thorough knowledge of the POS (currently InfoGenesis) and Purchasing/Inventory system (currently ProcureWizzard).
  • To update the POS database with new items, new prices and delete obsolete items for all products, ensuring that all products in use are in accordance with the menus in place at any time in the outlets.
  • To conduct a physical stocktake of beverage and tobacco with F&B departments at period end, and produce stock reports within specified timelines, ensuring the results reflect the accurate stock values
  • To update and maintain recipes into the systems. Check and ensure all menu items have a recipe, ahead of menu going live.
  • To perform month-end procedures on PW, to comply with corporate closing timetable.
  • To produce a monthly Food and Beverage report, recording revenue results and variances to budget and prior year per outlet.
  • To prepare and report daily cost results as well as to monitor all internal controls and procedures affecting the Food and Beverage operation in the hotel, including efficiency of purchasing.
  • To oversee the ordering of beverage items by the Cellar Person.
  • To regularly review departmental control procedures in the Food and Beverage outlets and assist to develop new control procedures where applicable.

Key Requirements

The ideal candidate would be able to demonstrate the following attributes:

  • Previous experience in a similar role within hospitality.
  • Experience with hospitality purchasing and POS systems is required, preferably with Infogenesis (POS), and Procure Wizzard
  • Excellent command of the English language
  • Excellent written and verbal communication skills to prepare and deliver reports, effective presentations and to facilitate meetings.
  • Strong interpersonal and relationship-building skills to work with cross-functional teams.
  • Highest level of integrity and transparency.
  • Excellent computer skills including Microsoft Excel, Word, and Outlook to a high level are essential.
  • Immaculate grooming standards
  • Ability to work on own initiative is essential
  • Strong organizational, administrative and time management skills, the ability to be flexible with hours, days off, assignments and additional duties.
