We are seeking a talented and knowledgeable Senior Sous Chef to join our new opening, The Horses! Opening in September 2026, The Horses will bring a fresh hospitality offering to Farringdon. Set within a building that has long been part of the local community, the venue will combine a pub atmosphere with exceptional dining, quality drinks, and attentive service across multiple floors. We are building a team that prides itself on delivering authentic hospitality, who are collaborative and create a genuinely warm, welcoming environment for every guest. This is an opportunity to join a new opening and help shape the venue from day one, becoming part of a business that values quality, teamwork, and a shared passion for great service.

Salary: up to £50,000 base salary + service charge (circa £12,000 per annum)

What you'll be doing as a Senior Sous Chef:

  • Support the Head Chef in running a smooth and efficient kitchen.
  • Lead, train, and mentor junior team members, fostering a culture of development and excellence.
  • Ensure high standards of health and safety, food quality, hygiene, and consistency.
  • Contribute ideas for seasonal menus and daily specials.
  • Be hands-on, working across different sections during busy service periods.
  • Take responsibility for maintaining exceptional food quality, presentation, consistency, and adherence to all health, safety, and hygiene standards.
  • Work closely with the Head Chef on menu development, seasonal dishes, specials, and continuous improvement of the food offering.
  • Oversee service across all sections, remaining hands-on during busy periods to ensure smooth execution and guest satisfaction.
  • Assist with stock control, ordering, food cost management, and minimising waste to support kitchen profitability.

About you, our new Senior Sous Chef:

  • Previous experience as a Senior Sous Chef or strong Sous Chef in a fast-paced, high-quality environment.
  • A passion for sustainability, seasonality, and a keen eye for detail and presentation.
  • Strong understanding of food safety and hygiene standards.
  • The ability to work under pressure and deliver exceptional results during busy service.
  • A team player who can guide and lead junior team members with excellent communication skills and a positive attitude.
  • A desire to learn and progress within the industry.
  • Flexible approach to work.
