The Halston is an independent, design-led hotel in Carlisle with a strong reputation and a loyal following. We are looking for an experienced and hands-on hospitality leader to take ownership of our restaurant and bar operation.
The Role
This is a senior, operational role with responsibility for Penny Blue Restaurant and Bar, alongside Bartons Yard Café Bar. You will lead the front of house management structure across both outlets, including managers and supervisors, driving standards, performance and team development. Working closely with our Executive Head Chef, you will support the overall leadership of the Food and Beverage operation, ensuring a consistent and joined-up approach across both front and back of house. This role is focused on Food and Beverage, with responsibility for our flagship restaurant and café. Our events operation is managed separately by a dedicated Events Manager and team. You will report into the Executive Head Chef, with regular interaction and visibility with the Managing Director. As part of the senior management team, you will contribute to the wider business and play an active role in driving performance and standards across the hotel.
Key Responsibilities
- Lead service across Penny Blue and Bartons Yard, maintaining a strong and visible presence on the floor.
- Lead and develop the management and supervisory team across both outlets, setting clear expectations and accountability.
- Create a positive and professional environment for both guests and team.
- Drive consistency, standards and attention to detail across all areas.
- Take ownership of guest experience, feedback and service recovery.
- Work closely with the kitchen to ensure a seamless and efficient service.
Commercial & Operational Responsibilities
- Manage labour costs, rota planning and wage percentages in line with budget.
- Monitor and drive P and L performance.
- Maintain control of stock, ordering and gross profit margins.
- Oversee till systems, cash handling and daily financial procedures.
- Drive revenue through effective service and upselling.
- Use reporting and data to support decision making.
Standards, Training & Development
- Deliver consistently high standards of service across all outlets.
- Train, coach and develop the FOH team to build confidence, knowledge and accountability.
- Lead from the floor as a hands-on presence, setting standards through example.
- Maintain strong attention to detail and a culture of pride in the business.
- Support the continued development of the business with a view to achieving recognition through AA Hospitality Awards (AA Rosettes), Michelin Guide and The Good Food Guide.
- Contribute to positioning Penny Blue and Bartons Yard as leading destinations within the region.
The Operation
Penny Blue Restaurant and Bar offers all-day dining, with peak trading from Friday to Sunday. Bartons Yard Café Bar is an established operation serving breakfast, lunch and drinks, open 7 days a week. This is a busy, quality-led environment with a mix of hotel guests and local clientele.
Working Pattern
Penny Blue operates Tuesday to Sunday. Bartons Yard operates 7 days a week. The role requires regular weekend working and a strong presence during key trading periods. Flexibility is essential in line with the demands of the business.
