The Grand Hotel in Eastbourne are recruiting for a Sous Chef to join our friendly team in the main kitchen.
Overview of the Sous Chef Role:
The role of Sous Chef supports the Executive Head Chef in the smooth running of this five star kitchen operation. You will be overseeing the production for the Garden Restaurant, specializing in modern English cuisine. Additionally, we cater for Banqueting for up to 350 covers along with a thriving Lounge and Room Service operation.
Working alongside the Executive Head Chef, other duties will include:
- Menu writing and planning
- Managing stock control and adhering to food cost guidelines
- Office management duties such as rotas, ordering, dealing with suppliers
- Training and development of the brigade, including performance management and general welfare
The Sous Chef position may suit an experienced junior sous chef with the right skills and attitude or an existing Sous Chef looking to take the next step in a larger operation. This is an exciting new role at the Grand with fantastic career advancement opportunities. You will be working hours as required, five days over seven, including weekends and bank holidays. Some split shifts are required. Interview will include a work trial.
Key skills for this role include:
- Previous experience within a luxury environment desired
