The luxury 5-star Grand Hotel Eastbourne in East Sussex is looking for a Chef de Partie Pastry to join our kitchen team. The Grand Hotel Eastbourne is the only 5-star coastal hotel in the country and one of the leading hotels in East Sussex and the South East. This is an outstanding opportunity for an experienced Pastry Chef to advance their career to Chef de Partie Pastry at a 5-star level, producing high-quality desserts, bread, and patisserie. This position is for the second pastry chef in a brigade of four in the pastry section of our main kitchen.
Responsibilities
- You will deputise for the Head Pastry Chef in his absence and support him in the efficient running of the section.
- Keep up with professional development in your area of expertise and contribute to departmental objectives.
- Update your working practices, reduce wastage, and use equipment and products efficiently and cost-effectively.
- Prepare for various F&B outlets, including Restaurants, Room Service, Banqueting, Lounges, and ancillary areas.
- Control and report stock levels to ensure they meet current and anticipated business needs.
- Attend training courses organized by the hotel, apply new skills and knowledge, and train fellow employees, trainees, and apprentices.
- Ensure dishes\’ quality and presentation meet the highest standards.
- Maintain high levels of cleanliness and tidiness in your section and throughout the kitchen.
Experience and Attributes
- Experience as a Pastry Chef in a busy, quality operation, preferably in the luxury hotel market.
- Calm under pressure with good command of English, both verbal and written.
- ‘Can do’ attitude, attention to detail, and initiative.
- Basic Food Hygiene and Level 2 Food Safety Certificates as a minimum.
