Primary Objectives: Under the guidance of the Director of Food and Beverage, the Trainee Manager (TM) will support the overall operation of the hotel's bar, restaurant, and meeting & events spaces, ensuring exceptional service standards and memorable guest experiences. This role works closely with the senior F&B teams to oversee daily operations and maintain the highest levels of quality, presentation, and efficiency expected in a luxury hospitality environment.
The Opportunity: We have designed an 18-month programme, specific to food and beverage operations, upon completion there will be the prospect of moving into a managerial level role. You will support the food and beverage departments in delivering service standards in breakfast, afternoon tea, dinner, beverage service, meetings & events, private dining, and in-room dining. In addition, you will provide structured learning and development and mentoring from our senior leadership team.
General Responsibilities:
- Assist in managing the day-to-day operations of Food and Beverage outlets.
- Ensure consistently high standards of service, cleanliness, and guest satisfaction across all areas.
- Supervise, train, and motivate team members, fostering a culture of excellence and professionalism.
- Support recruitment, onboarding, and performance management of F&B staff.
- Monitor service flow and step in during peak periods to maintain seamless guest experiences.
- Collaborate with the kitchen team to ensure smooth coordination between front and back of house.
- Assist in planning and executing meetings, events, and private functions to luxury standards.
- Handle guest feedback and resolve complaints promptly and professionally.
- Support inventory management, stock control, and ordering processes.
- Ensure compliance with health, safety, and licensing regulations.
- Contribute to budget control, cost management, and revenue optimization initiatives.
- Maintain five-star standards in accordance with AA and TNI criteria.
- Assist in achieving departmental budgets and controlling costs.
Skills and Qualifications:

- Essential: A minimum of three years previous experience in a supervisory role within a luxury hotel or high-end hospitality environment. A formal hospitality qualification (Minimum of a Level 3 Apprenticeship in Hospitality or Tourism). Strong knowledge of food, beverages, wines, and service standards.
- Desirable: Degree in Hospitality or related field. WSET Level 2/3 or similar beverage certification.
Work Pattern: The position is Full-time (37.5 hrs per week), it is essential that you are available to work flexibly (various shift patterns and any five days of seven). The Fitzwilliam Hotel relies upon the flexibility of its staff to ensure the continuity of the high standards currently being achieved.
