The Person

This role really has the potential for you to make something your own, creating and driving the pastry experience to be unique. You will be able to adopt current trends in the marketplace and spot others before they occur, with a particular interest on the vegan and egg-free experimentations.

The Role

As Pastry Chef you will be in charge of all aspects of the production, presentation, recipe development for the pastry operation, you will be reporting directly to the Head Chef and Sous Chef.

Key responsibilities (A non-exhaustive list):

  • Oversee all the pastry hotel operations including, but not limited to, The Folio Bar & Kitchen, Sage of Cambridge, and Room Service Operations.
  • Monitor and apply pastry trends including plant-based, vegan and gluten free with a focus on continuous improvement
  • Assist the Head Chef to operate within departmental budgets through effective stock and cost controls and well managed schedules
  • Ensure team members have an up-to-date knowledge of all pastry menus for all outlets as well as hotel facilities and current offerings.
  • Ensure ongoing training with your pastry team
  • Plan and manage the day-to-day operation of the pastry section in relation to staff productivity, facilities, equipment, food standards and sales through effective communication and delegation.
  • Control on an on-going basis; quality and presentation of food items; keeping the standards set; portion control and operating costs; staff behaviour and hygiene practices.
  • Work practices being undertaken, and cleanliness of the kitchens meet Food Hygiene legislation and the principles of H.A.C.C.P. (Hazard Analysis of Critical Control Points).
  • Check effective controls are in place i.e. stock rotation, stock holding, food wastage, portion control etc. to ensure food gross profit (GP%) is achieved on a monthly basis, related to own area.
  • Contribute to succession planning within the hotel and company.
  • Ensure team members comply with hotel security, fire regulations, food hygiene and all health and safety legislation.
  • Deliver the product to expected Brand standards and manage the QE process.
  • Ensure the department adheres to Hotel policies and procedures
  • Ensure the department partakes in wider hotel initiatives including Environmental and Community projects.
  • Ensure competence and efficient delivery of Hilton Honors loyalty programme and ensure full compliance.

About You

  • Holds previous experience as a Pastry Chef or in a similar pastry-focused kitchen role.
  • Have Strong knowledge of pastry techniques, baking and dessert production.
  • Be passionate about fresh food and high-quality ingredients.
  • Is creative, detail-oriented and committed to maintaining excellent standards.
  • Able to work independently while also being an effective team member.
  • Organised and able to manage multiple tasks in a busy hotel environment.
  • Holds Good understanding of food hygiene and kitchen safety.
  • Has a positive attitude and genuine passion for hospitality.

Core requirements:

  • UK citizen or valid work permit
  • Proficient numeracy and literacy skills
  • 3 years previous pastry chef experience in a restaurant or Hotel
  • Proven ability to plan menus, develop recipes, manage stock and costs effectively
  • In Depth Knowledge of vegan, gluten-free and egg-free baking
  • In-depth knowledge of UK Food Hygiene and Health & Safety Laws
