OUR HOTEL Located within The Edinburgh Grand, Lady Libertine is a stylish, two-level cocktail bar and restaurant with a bold personality. The concept includes a relaxed café and wine bar at street level, and a vibrant, design-led cocktail bar in the basement featuring a mezzanine and a private “Vault” function room. The venue offers all-day dining, seasonally inspired sharing plates, and an energetic drinks and entertainment programme, with live DJs and events on weekends.

A DAY IN THE LIFE OF A SENIOR SOUS CHEF AT OUR HOTEL What you'll be doing...

  • Support the Head Chef in leading the kitchen operation, bringing creativity, precision, and passion to every dish that leaves the pass.
  • Take responsibility for the day-to-day running of the kitchen, ensuring prep, cooking, and service are delivered smoothly, efficiently, and to the highest standards.
  • Lead, motivate, and develop the kitchen brigade, mentoring junior chefs and fostering a positive, collaborative team culture.
  • Play an active role in menu planning and development, introducing innovative ideas, seasonal ingredients, and fresh flavour combinations.
  • Oversee stock control, ordering, and inventory management to ensure the kitchen is consistently well-prepared and operating efficiently.
  • Maintain exceptional standards of food quality, presentation, and consistency across all service periods.
  • Ensure all hygiene, food safety, and cleanliness standards are strictly followed, maintaining a safe and organised kitchen environment.
  • Step confidently into leadership during service, supporting the Head Chef and ensuring the team performs at its best during busy periods.

WHAT WE NEED FROM YOU

  • Proven experience as a Sous Chef or Senior Sous Chef within a fast-paced, high-quality kitchen environment.
  • Strong leadership and communication skills, with the ability to inspire, train, and develop a high-performing team.
  • A genuine passion for food, creativity, and delivering exceptional culinary experiences.
  • Excellent organisational and time-management abilities, with confidence in managing stock, ordering, and kitchen operations.
  • High attention to detail and a commitment to maintaining consistently excellent standards.
  • A proactive, hands-on approach with the flexibility to support all areas of the kitchen when needed.
  • The ability to remain calm under pressure and thrive in a dynamic, service-led environment.
  • Sound knowledge of food hygiene, health, and safety regulations.
