We’re excited to share a fantastic opportunity to join our team at The Early Bird Bakery as a full-time Head Pastry Chef.

Based on Kings Heath High Street, The Early Bird is a well-established coffee shop and bakery known for our high-quality bakes and warm customer service. Over the past six years, we’ve built a loyal following, and last year we expanded by opening a second site, Perch, in Birmingham city centre. We supply Perch daily from our Kings Heath bakery and also run a growing corporate catering arm from this central location.

We’re now looking for a talented and motivated Head Pastry Chef to head up our pastry section and help take our offering to the next level.

About the Role:
You’ll work closely with our experienced kitchen team, leading the pastry section in the preparation of cakes, viennoiserie, and patisserie. Key responsibilities include:

  • Overseeing pastry production and maintaining product quality
  • Managing and supporting the pastry team
  • Planning and developing menu items
  • Ordering and stock control

As an independent bakery, everything we make is baked in-house and we have full creative freedom with our menu — so we’re looking for someone with ideas, initiative, and a genuine passion for baking.

Please Note:
This is an early-start position, with shifts beginning from around 5am. Public transport is limited at this time, so please consider how you would travel to Kings Heath for these early starts.

We’re looking for someone who has:

  • The ability to work well with others in a team environment
  • A confident and creative cooking style
  • A passion for the industry and committed to succession planning within the company
  • A friendly, enthusiastic and positive attitude at all times
  • Maintains exceptional customer service and presentation standards
  • Thrives and excels under pressure
  • Salary – up to £34k pa plus tips
  • Full time – 42.5 hours a week, across 5 days
  • Required to work weekdays and weekends
  • A minimum 3 years pastry experience in a professional kitchen environment
  • Good time management
  • Ability to work flexible hours
  • Demonstrated ability to manage time effectively, delegate tasks and lead junior staff
