The Clink Charity is seeking a passionate and driven Restaurant Manager to join our award-winning restaurant inside HMP Brixton. This is an opportunity to combine exceptional hospitality with life-changing rehabilitation work helping people rebuild their futures through training, mentoring and meaningful employment opportunities. Since 2009, we have trained around 5,000 prisoners and delivered more than 2,600 City & Guilds qualifications across hospitality and food service disciplines. Our innovative programmes support people both inside prison and after release, helping reduce reoffending through education, mentoring and employment pathways.
About the Role
Working alongside the General Manager and Head Chef, you will help operate The Clink Restaurant at HMP Brixton delivering an outstanding guest experience while training and mentoring prisoner students in hospitality and front-of-house service. This is a hands-on leadership role requiring operational excellence, compassion, resilience and strong people management skills.
Responsibilities Include:
- Delivering engaging, high-quality hospitality training to prisoner students
- Supporting students from interview and induction through to qualification
- Leading smooth and professional lunch and dinner services
- Creating an exceptional guest experience for restaurant visitors
- Managing bookings and customer enquiries
- Maintaining City & Guilds compliance and training records
- Ordering drinks and non-food supplies from nominated suppliers
- Managing stock control, portion control and wastage
- Completing HACCP documentation and operational checks
- Motivating and developing students to build confidence, pride and employability skills
About You
We are looking for someone who combines strong hospitality experience with a genuine desire to support rehabilitation and training. You will ideally have:
- Experience in a Restaurant Manager, Bar Manager or Assistant Restaurant Manager role within a premium hospitality environment
- Strong leadership and organisational skills
- Excellent communication and interpersonal abilities
- Experience training, mentoring or developing teams
- Confidence working in a structured and unique operational environment
- Good IT and administration skills
Desirable but not essential:
- TAQA qualification or equivalent assessor qualification
- V1 Assessor Award / Craft Trainer qualification
- Experience delivering workplace-based training
