The Marquee Moon is the latest project from the team behind the Cause. While still keeping music at its heart, it has a more prominent focus on food & beverage. Cocktails, natural wines and an in-house kitchen offering, all paired with refined musical selections from some of the most esteemed diggers around. While the project will still feature a late-night offering with music playing a big part, this is not a nightclub; the venue spans two distinct areas in the heart of Dalston, housed within a historic pub building.

We are looking for a vastly experienced & multi-talented General Manager to help build & develop a team and turn this project into a financially & culturally successful weekly operation.

THE ROLE

The General Manager will be responsible for developing and delivering short, medium and long term strategies to mitigate challenges and ensure the full commercial potential of the business. You will lead the business bar team and be the line manager for the Assistant General Manager. Agreed targets regularly and consistently for both wet and dry sales will include elements such as labour %, stock cost and wastage management amongst others.

RESPONSIBILITIES

  • Oversee the management of and maintain the security of the venue's operational safety (H&S) compliance is up to date, analysed, and improved where applicable.
  • Lead the management of all aspects of bar operations, both front and back of house, with an emphasis on maximising efficiency and profitability.
  • Ensure the bar & floor team maintains high standards at all times.
  • Oversee the management of stock and the supplies to ensure they are maintained to the agreed levels, waste is minimised and stock costs are within target percentages of turnover.
  • Assist with the development of the bar menu based on customer demand and seasonality.
  • Assist with the sourcing, negotiation and ordering with all suppliers and contractors, including any sponsorship / retro or listings deals, saving money wherever possible and adding value with new products.
  • Produce, reconcile and take control of all daily & weekly reporting duties.
  • Be responsible for all paperwork and administrative duties produced by the bar and floor team; including staff scheduling, reconciling invoices, stock control and HR requirements.
  • Oversee staff rotas, ensuring staff ratios align with demand while managing payroll costs.
  • Take ultimate responsibility for labour reporting metrics such as labour percentage forecasts and actual results, labour hours, and holiday management.
  • Ensure all rotas are ready for approval on Rota Ready within set deadlines.
  • Oversee all staff training with the support of the bar management team and HR.
  • Nurture, train and develop all new and existing staff, championing to promote from within.
  • Ensure customer booking software and procedures are up to date and regularly monitored to provide a swift experience for all customer enquiries.
  • Ensure all customer enquiries including monitoring emails, social media messages, booking platforms and location listing sites are monitored for enquiries daily.
  • Ensuring social media is executed from the team on site, including daily stories and regular posts, using guidelines set from our creative team.
  • Ensuring all internal marketing is current and advertised within a good lead up time i.e., internal posters, menus, chalk / street boards.
  • Ensuring general upkeep, and quality control of the venue, including but not limited to cleanliness of bars, public areas, toilets, entrance, outdoor space, caring about the presentation of the premises, quality of service, products sold and an overall good eye for detail.

SKILLS & EXPERIENCE

  • Significant breadth and depth of management experience at a senior manager level (3+ years), ideally across a range of high quality, high-volume F&B and late-night venues.
  • Possess commercial instincts and financial management skills to be delivered against key performance indicators.
  • A leadership style that is engaging, confident and proactive in a fast-paced environment that's unpredictable and constantly changing.
  • Bring fresh ideas and provide a wider industry perspective to the business, whilst working proactively, and with integrity at all times.
  • In-depth knowledge and understanding of alcohol service and food safety legislation; as well as the ability to adapt to changing circumstances.
  • Able to work weekends, public holidays and late-night hours.
  • Experience in incident response; managing police, licensing enforcement, council visits; as well as adapting to legislative changes.
  • Experience in scheduling software e.g. Rotaready, Deputy and similar.
  • Experience in restaurant booking software such as Open Table, Designmynight & ResDiary.
  • Personal Licence Holder TPBN1_UKCT.
