The Marquee Moon is the latest project from the team behind the Cause. While still keeping music at its heart, it has a more prominent focus on food & beverage. Cocktails, natural wines and an in-house kitchen offering, all paired with refined musical selections from some of the most esteemed diggers around.
THE ROLE
The General Manager will develop and deliver short, medium and long‑term strategies to mitigate challenges and ensure the full commercial potential of the business. The role includes leading the bar team, line managing the Assistant General Manager, and meeting agreed targets for both wet and dry sales while managing labour percentage, stock costs and wastage.
RESPONSIBILITIES
- Oversee the management and maintain the security of the venue’s operational safety (H&S) compliance.
- Lead the management of all aspects of bar operations, both front and back of house, maximising efficiency and profitability.
- Ensure the bar and floor team maintains high standards at all times.
- Oversee stock management and supplies, keeping waste minimised and stock costs within target percentages of turnover.
- Assist with the development of the bar menu based on customer demand and seasonality.
- Assist with the sourcing, negotiation and ordering from all suppliers and contractors, including sponsorship or listings deals, saving money wherever possible and adding value with new products.
- Produce, reconcile and take control of all daily and weekly reporting duties.
- Handle all paperwork and administrative duties produced by the bar and floor team, including staff scheduling, reconciling invoices, stock control and HR requirements.
- Oversee staff rotas, ensuring ratios align with demand while managing payroll costs and providing labour reporting metrics.
- Oversee all staff training with the support of the bar management team and HR, nurturing and developing new and existing staff and championing promotion from within.
- Ensure customer booking software and procedures are up to date and regularly monitored to provide a swift experience for all customer enquiries.
- Monitor all customer enquiries, including emails, social media messages, booking platforms and listing sites, daily.
- Ensure social media is executed from the team on site, including daily stories and regular posts, using guidelines set from our creative team.
- Ensure all internal marketing is current and advertised with sufficient lead time, i.e., internal posters, menus, chalk and street boards.
- Ensure general upkeep and quality control of the venue, including cleanliness of bars, public areas, toilets, entrance, outdoor space, presentation of the premises, quality of service, products sold and an overall good eye for detail.
SKILLS & EXPERIENCE
Must Have
- Significant breadth and depth of management experience at a senior manager level (3+ years), ideally across a range of high quality, high-volume F&B and late-night venues.
- Possess commercial instincts and financial management skills to be delivered against key performance indicators.
- A leadership style that is engaging, confident and proactive in a fast‑paced environment that is unpredictable and constantly changing.
- Bring fresh ideas and provide a wider industry perspective to the business whilst working proactively, with integrity at all times.
- In‑depth knowledge and understanding of alcohol service and food safety legislation, and the ability to adapt to changing circumstances.
- Ability to work weekends, public holidays and late‑night hours.
- Experience in incident response; managing police, licensing enforcement, council visits and adapting to legislative changes.
- Experience in scheduling software e.g. Rotaready, Deputy and similar.
- Experience in restaurant booking software such as Open Table, DesignMyNight & ResDiary.
- Personal Licence Holder.
