We are seeking a Junior Sous Chef to help lead our kitchen brigade, delivering exceptional dishes crafted with skill, creativity and a passion for Scottish produce.

The Person

  • An experienced chef with strong leadership qualities and high culinary skills.
  • Calm, organised and confident when leading a kitchen section or full service.
  • A collaborative team player with excellent communication skills.
  • Passionate about training and developing junior chefs.
  • Strong understanding of food safety, HACCP and kitchen operations.

The Role

  • Support the Head Chef in leading, managing and motivating the kitchen team.
  • Oversee daily food preparation, cooking and presentation to brand standards.
  • Maintain smooth kitchen operations, stepping up in the Head Chef’s absence.
  • Ensure food quality, consistency, cost control and minimal waste.
  • Champion health & safety, hygiene and compliance across the kitchen.

Key Responsibilities

  • Lead and support chefs during service, ensuring dishes meet specification.
  • Maintain kitchen organisation, cleanliness and stock control.
  • Assist with scheduling, staffing decisions and performance reviews.
  • Collaborate with front‑of‑house to deliver seamless guest experiences.
  • Provide on‑the‑job coaching and help develop training programmes for junior chefs.
