Our Butcher
Our Butcher is a skilled, hands-on role at the heart of our Butchery team, working across both our Farm Shop Butchery and Avalon Butchery.
One week you could be expertly preparing cuts and sharing your knowledge with customers; the next, crafting bacon, sausages, burgers and charcuterie.
You'll bring versatility, craftsmanship and a passion for exceptional produce, helping us deliver outstanding quality across retail, e-commerce and processed meat production.
Key Responsibilities
- Cut, prepare and serve meat for our Farm Shop customers, offering knowledgeable advice on cuts, cooking and provenance.
- Prepare, pack and label e-commerce orders accurately, ensuring quality and shelf-life standards are met.
- Produce bacon, sausages, burgers and charcuterie to specification, including curing, smoking, fermenting, forming and cooking.
- Maintain consistently high standards of quality, flavour, texture and yield across our products.
- Receive deliveries, rotate stock and maintain the correct stock or ingredient levels.
- Follow HACCP, hygiene, traceability, recipe and specification requirements across both Butchery sites.
- Guide and check the work of the Butchery Operative when working together on site.

What we're looking for
- Genuine pride in the craft of butchery across both retail and processed meat production.
- Proven butchery skills, including cutting, boning, preparation, whole-carcass and retail cuts.
- Working knowledge of processed meat production such as bacon, sausages, burgers or charcuterie.
- Confidence working with customers and providing friendly, knowledgeable retail service.
- A good understanding of food safety and HACCP requirements.
- A versatile approach, with the flexibility to move between sites and different areas of production.
- Reliable, accurate and able to work effectively to schedules, order sheets and production plans.
- Experience in e-commerce fulfilment, artisan charcuterie or systems such as Mango and Recipe Professor would be advantageous.

The Newt Butchery transforms estate-reared livestock into premium, provenance-led products for Retail, Hospitality, E-commerce and Wholesale channels.
The department operates across two sites: the Farm Shop Butchery at Hadspen, a single counter serving both retail walk-in customers and e-commerce fulfilment, and Avalon Butchery, dedicated to processed meat production; bacon, sausages, burgers and charcuterie.
