When premium meat needs to meet exact customer specifications, the quality of the finish matters just as much as the cut itself. As a Trimmer (Nights), you will use your knife skills across beef, lamb, pork, poultry and game, producing consistently high standards while maximising yield in a professional production environment.

Your responsibilities as Trimmer:

  • Trim meat to precise customer specifications, removing excess fat, sinew, cartilage and bone while maximising yield
  • Prepare primal and sub-primal cuts ready for further processing
  • Support deboning and the breakdown of carcass sections when required
  • Maintain high standards of product presentation, weighing, labelling and preparation for dispatch
  • Use knives and butchery equipment safely while following HACCP, food safety and hygiene procedures
  • Meet productivity and yield targets without compromising product quality

What we’re looking for in a Trimmer:

  • Previous experience within meat trimming, boning, butchery or skilled knife work
  • Experience handling multiple species, including beef, lamb, pork, poultry and game
