We’re recruiting a Butchery Operations Manager to join a premium, farm-to-fork estate business focused on regenerative farming, whole-carcass utilisation, and high-quality food production. What you’ll be doing as Butchery Operations Manager:
- Oversee the full butchery operation from carcass breakdown through to finished product, ensuring high standards of quality, efficiency, and compliance across multiple channels including retail, hospitality, and wholesale.
- Lead day-to-day operations across breaking, packing, fulfilment, and value-added production
- Drive yield optimisation and whole-carcass utilisation
- Manage production planning, workflow, labour, and equipment readiness
- Ensure compliance with HACCP, food safety standards, and FSA requirements
- Maintain traceability, CCPs, and production documentation using food safety systems
- Oversee recipe management, costing, and product consistency
- Support development of charcuterie and value-added products (cured, smoked, etc.)
- Lead, train, and develop the team to ensure consistent performance and standards
- Collaborate with retail, hospitality, and wholesale teams to meet demand
