We are looking for an experienced Butchery Manager to take ownership of our Butchery Department as the go-to expert for meat quality and standards. This is a hands-on leadership role where you will drive efficiency across the operation, lead and develop a skilled team, and take full responsibility for equipment performance, team KPIs, and the cutting and preparation of all meat types. We are a family-run catering butcher, established in 1962, with a close-knit team of Butchers, Production Operators, Warehouse Assistants and Delivery Drivers, supplying premium meats from around the world to customers across London and the Home Counties.

What you'll be doing as Butchery Manager:
- Planning and managing daily butchery workflows, aligning orders, production schedules and stock levels to keep the operation running efficiently.
- Acting as the in-house expert for meat quality and workflow queries, resolving issues across the business, including substitutions, QA holds and product challenges.
- Leading, managing and developing the team, overseeing workload, performance standards, holidays, progression and day-to-day engagement.
- Maintaining and improving quality assurance, food safety and hygiene standards, including daily cleanliness, scheduled deep cleans and monitoring frequent issue products.
- Owning butchery equipment and facilities, troubleshooting day-to-day issues, maintaining assets and escalating where required.
- Collaborating with senior management and department leads on SOPs, stock planning, budgets and new product development, ensuring systems and documentation remain accurate and aligned.
- Training and upskilling apprentice butchers and wider teams through ongoing product, process and skills training, while completing one early shift per month as part of management cover.
What we're looking for in a Butchery Manager:
- Advanced butchery and knife skills, with a strong understanding of portion control and hands-on use of butchery machinery.
- Proven ability to manage time and workflows effectively in a fast-paced environment, balancing multiple priorities with close attention to detail.
- Strong leadership, communication and stakeholder management skills, including working closely with customers and internal teams.
- Excellent knowledge of food safety practices and regulations, with the ability to maintain high compliance standards (Level 3 training provided).
- Passion for quality meat, food and flavour, combined with a flexible, solutions-focused approach to problem solving.
Working hours:
- Monday to Friday, Night Shift 01:00 - 10:00
- 1 Saturday per month - 04:00 - 13:00 (fixed schedule)
- Overtime potential on discussion with Leadership Team
