We are seeking an experienced Wine & Bar Manager to join an exciting all-day dining concept in the heart of Central London. Inspired by the timeless elegance of French brasseries, our menu pays homage to the classics, complemented by an outstanding wine programme showcasing some of France's finest vineyards alongside a creative and refined signature cocktail offering.

The Role

As Wine & Bar Manager, you will report directly to the General Manager and take full ownership of the bar and beverage operation. From leading breakfast service with fresh juices and morning hospitality to guiding guests through an exceptional French wine list during dinner, no two days will be the same. You will be responsible for:

  • Delivering exceptional guest experiences and leading service from the floor
  • Managing all beverage stock control, ordering, and inventory
  • Monitoring and reducing wastage while maintaining strong GP margins
  • Leading bar preparation and ensuring impeccable standards at all times
  • Recruiting, training, mentoring, and developing your team
  • Driving wine sales through confident upselling and team education
  • Overseeing the cocktail programme and maintaining consistency of execution
  • Supporting new opening procedures and helping establish a best-in-class beverage operation
  • Being a visible, hands-on manager who leads by example and inspires the team

About You

We are looking for someone who has:

  • Previous experience as a Wine Manager, Bar Manager, or Senior Beverage Manager in a premium hospitality environment
  • Strong knowledge of French wines and a genuine passion for wine education
  • Experience leading service and delivering exceptional guest experiences
  • A proven track record in stock management, cost control, and minimising wastage
