We are seeking an experienced and passionate Pastry Senior Chef de Partie to join our team at The Arts Club in Mayfair. Your expertise in preparing a variety of mouthwatering desserts and pastries, combined with your creative flair in developing unique tastes and recipes, will be essential in delighting our customers. Responsibilities

  • Prepare, produce, and present all pastry and dessert items to the highest quality and presentation standards.
  • Support a talented pastry team in daily operations, assist in mentoring junior team members, and ensure high standards of quality, consistency, and creativity.
  • Assist in the daily preparation, service, and efficient operation of the pastry section across various outlets.
  • Ensure consistency in taste, texture, and appearance in all pastry products.
  • Uphold rigorous food hygiene, safety, and cleanliness practices in accordance with HACCP and company standards.
  • Support the training and development of junior pastry staff, leading by example and sharing technical knowledge.
  • Collaborate with the Head Pastry Chef to develop new menu items, seasonal offerings, and bespoke desserts for events, contributing creative ideas, conducting tastings, and assisting with trials and implementation.
  • Monitor inventory levels and assist with stock rotation, ordering, and cost control.
  • Ensure equipment and kitchen areas are maintained in excellent condition.

Requirements and Skills

  • Proven experience as Pastry Senior Chef de Partie or relevant role.
  • Great attention to detail and creativity.
  • Organizing and leadership skills.
  • Willingness to replenish professional knowledge.
  • In-depth knowledge of sanitation principles, food preparation and baking techniques and nutrition.
  • Working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.).
  • Certificate in culinary arts, pastry-making, baking or relevant field.
