A brand new kitchen. A blank canvas. We are looking for the leader to help build it from day one. We are opening the doors at Locke Canary Wharf, and food sits right at the heart of the plan. As our founding Executive Sous Chef, you will not be stepping into someone else's kitchen, you will be helping to shape it. From the first menu to the first service, you are the right hand to the Head Chef and the driving force behind the pass in one of London's most dynamic districts, working with a group that is genuinely reinventing what modern hospitality can be.

This isn't a role where you inherit the way things are done. This is a new opening, which means you get to set the standards, build the brigade, and help define the culture of the kitchen from scratch. What Will You Be Doing?

  • Helping to launch a brand new kitchen, from setup and systems to the first service
  • Leading the kitchen alongside the Head Chef and stepping up in their absence
  • Developing and refining menus, specials, and dishes that excite our guests
  • Recruiting, coaching, and inspiring a new brigade to deliver at their best
  • Owning food safety, hygiene, and health and safety compliance across the kitchen
  • Controlling food cost, GP, ordering, and stock to hit commercial targets
  • Building a positive, high-performing kitchen culture from the ground up

What Do You Need?

  • Proven experience as a Senior Sous Chef or Executive Sous Chef in a quality, high-volume kitchen
  • Strong leadership skills with the ability to build and motivate a team
  • Excellent culinary knowledge across a range of techniques and cuisines
  • A firm grasp of food cost control, GP, and kitchen commercials
  • Full understanding of food safety and health and safety legislation
  • Calm, decisive, and organised under pressure, with the energy for a launch
  • The Right to Work in the UK
