Responsibilities
- Recruitment, training and coaching a team of 6 chefs and 3 kitchen porters, expanding as business grows.
- Menu planning, supplier resourcing, ordering, delivery, storage, preparation, cooking and service across all food areas within the hotel.
- Develop menu ideas to progress food offering to rosette standards across restaurant, banqueting, afternoon tea and corporate functions.
- Ensure compliance with HACCP and food hygiene, health and safety legislation.
- Achieve gross profit targets on dishes to allow future investment in facilities and staffing.
- Create passion, flair and drive within the team to help the hotel achieve its quality and business objectives; promote effective teamwork and communication across departments.
- Provide menus for varied business segments, catering to hotel guests, in‑house conference delegates and local area guests; manage wedding catering in the 2 wedding suites.
Requirements
- Experience developing a quality hotel restaurant to 2‑rosette standard and beyond.
- Proven record of team selection and retention supporting the development of excellent standards.
- Demonstrated practical ability and flair during a cooking trial to drive and motivate others.
- Ideas for developing food offering and improving standards, presented during interview.
- Experience managing multi‑menu requirements and busy banqueting operation.
- Live locally or willing to relocate with own transportation.
