The Tudor Pass is a Michelin‑starred, 4 AA Rosette award‑winning restaurant located in The Great Fosters Hotel. Since July 2025 it has been led by Chef Stefano Di Giosia, formerly of The Fat Duck and KOL. The kitchen focuses on seasonality and locality, with many ingredients grown in the estate’s own gardens. This intimate restaurant has only seven tables and a private Wine Room (eight covers). It is open Wednesday–Saturday for both lunch and dinner. The small, dedicated team of chefs and staff strive to create memorable, award‑winning dishes.
Role Overview
You will work as part of a team of three, delivering the highest standard of service and care to guests during lunch and dinner service.
Responsibilities
- Prepare the Tudor Room for each service
- Lay and polish each table with attention to detail so that cutlery and glassware sparkle
- Welcome, greet and seat guests
- Discuss menu items and assist guests with wine choices
- Deliver outstanding food service across all tasting menu items
- Provide excellent standards of beverage and wine service
- Coach and support the Commis Waiter/Waitress
- Respond to guest requests and act on satisfaction‑check feedback
- Support the Restaurant Manager to resolve any service issues
- Reset the restaurant at the end of the shift for the next service
- Ensure the work area is clean and tidy before departure
Requirements
- 4 days per week (Wednesday‑Saturday) – 37.5 hrs for lunch and dinner service
- Smart appearance and excellent communication skills with a passion for guest service
- Attention to fine detail in set‑up and service
- Knowledge of food and wines to confidently communicate with guests
- Experience in fine dining or tasting menus is highly desirable
